Designed to perform distillations at reduced pressure and temperature, our rotary evaporator pakage enables chefs to easily purify liquids, concentrate flavors, and obtain essential oils that can be used to infuse or intensify flavor without affecting the texture or composition of the final dish.
The purpose of distillation is to separate a given mixture into its components based on their respective volatilities, through the process of evaporation and condensation. In culinary applications, it can be used to concentrate non-volatile components in a mixture by removing their water content or to gently extract the volatile aroma and flavor molecules from mixtures at low temperatures. Basically it is a way to separate food compounds from one another without altering them.
Our rotary evaporator is a multi-component system comprised of a digitally controlled heating bath in which a rotating evaporation glass flask containing the product to be distilled is immersed. The rotation of the evaporation flask increases the surface area of the product, therefore speeding the distillation process and keeps the mixture evenly mixed. The vapor created by this heating process, is removed under vacuum (which lowers the boiling point of the product) and travels through a glass coiled condenser. The glass condenser is liquid-cooled to -20°C using a chilling unit to rapidly condense the distilled vapor back into a liquid state. The resulting distillate then drips from the condenser into a glass receiving flask.
