Typically used for: spherification and reverse spherification.
Origin: Gum extracted from the cell walls of brown algae. Sodium alginate has no discernable flavour.
Characteristics/Application: Most commonly used with calcium chloride setting bath to make caviar/
spheres. Also used at 0.5% in water solution to create setting bath for reverse spherification.
pH tolerance; 2.8-10
Usage: 0.5 – 1%
