Typically used for: Acid buffer to adjust pH of a solution.
Origin: Found naturally in citrus, berries and fruits.
Characteristics/applications: Mild, tart and salty taste. Used as a flavour enhancer and/or preservative.
Sometimes used as an emulsifier for oils when making cheese or cheese sauce. Sodium citrate allows
the cheeses to melt without becoming greasy.
Usage: 4% for cheese sauce.
