Typically used for: thickening, heat stable gels, fluid gels and stabilize emulsions.
Origin: Gelatinous substance derived from various kinds of red seaweed. It is a natural
vegetable gelatin counterpart.
Application/characteristics: Heat resistant and creates firm, brittle gels.
Tolerates salt, sugar, alcohol and acid environments. Sets at 35°- 45°C. Melts again at 85°C.
pH tolerance; 2.5-10
Usage level: 0.5 – 3%.
